This study was aimed to determine fatty acid compositions of Jerusalem artichoke herbages (Helianthus tuberosus) at five different phenological stages. harvested early vegetative, flowering, full and seed stages its herbage samples were obtained. In the herbages, saturated (∑SFA), unsaturated (∑UFA), polyunsaturated (∑PUFA), monounsaturated (MUFA), medium chain acids (∑MCFA), long (∑LCFA) very (∑VLCFA) analyzed.
